Karaya gum is a stabilizer that preserves the consistency and viscosity of food products. Pectin has a similar effect. The additive refers to foam stabilizing agents, which are good emulsifiers and are used in liquid products for foam formation and retention.

Like most colloidal systems, the foam is dynamically unstable. Stabilizers and foaming agents are used to form and maintain its consistency. The properties of the latter improve hydrocolloids such as pectin, agar, gelatin. Different binders are used in different products depending on their water and fat content. For those who have a large amount of fat in their composition, karaya gum is used.

Use

The additive E 416 is used in the food industry in the production of:

  • mousses and whipped cream;
  • confectionery creams obtained by whipping;
  • cakes;
  • candy;
  • broken down dairy products;
  • soft drinks and beer.

Impact on humans

There is no set limit for E 416 . The supplement is not used in baby food, is not an allergen and does not cause skin inflammation. Products containing the substance should be consumed with special care by people with metabolic disorders and diseases of the gastrointestinal tract.
