Required products :

  • 100 grams of cooked rice
  • 200 milliliters of olive oil (or refined vegetable oil)
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon mustard

 

Method of preparation :

It is best to use round grain rice. Boil it in water in a ratio of 1: 4 for 30 minutes. The berries should be boiled a little, wait for them to cool and drain the liquid with a colander.

 

Do not throw away the decoction, as it may be needed later.

Pour half of the olive oil over the rice and puree using a blender.

 

Add the mustard and puree again. At this stage, the mayonnaise will look like bran, but don't worry about it.

 

Then beat with a mixer or wire whisk, gradually pouring the remaining olive oil. The sauce should acquire a smooth texture. The amount of oil can be adjusted as needed (+/- 50 milliliters). If the mixture is too thick, pour some of the rice water left over from cooking the grains.

 

If desired, you can pass through a sieve, so the consistency will be even smoother.

Season with salt, sugar and a teaspoon of lemon juice. Wait 10 minutes for the dry ingredients to dissolve, then taste.

 

If necessary, adjust with additional amounts of spices, depending on the sweetness and sour nuance of the end result and your preferences.

 

You can use table vinegar instead of lemon juice.

 

The sauce is a suitable addition to salads or cooked vegetables. An option is to season with garlic and green spices of your choice, also to enrich with chopped capers or gherkins.
