Food restriction is one of the main conditions of Great Lent. Abstinence in the choice and quantity of food helps believers to prepare physically and spiritually for the celebration of the Resurrection of Christ.

The church charter orders Christians to give up meat, fish, eggs, dairy products and dishes using them during the fasting period. But even with strict restrictions, you can eat healthy and tasty lean food. Today, there are many recipes for fasting dishes. We want to share the best of them with you.

First courses

According to the Lenten food calendar, hot first courses are eaten on Tuesdays, Thursdays and weekends.

 

Lean borscht . You can make delicious and healthy vegetarian borscht from lean products. The recipe uses vegetable oil, which is allowed to be eaten only on weekends. Therefore, those who strictly observe fasting, this dish can be included in the menu on Saturday and Sunday. For those who do not strictly follow church rules, Lenten borscht is also suitable for other days.

Ingredients: 50 g of cabbage, one medium-sized beet and carrot each, 4 potatoes, 1 onion, 200 g of tomato juice, 1 tbsp. a spoonful of flour, a bunch of dill, 2 cloves of garlic, a teaspoon of mustard, spices and salt to taste, 2 tbsp. spoons of vegetable oil for frying.

Put a pan with 2 liters of water on the fire. While the water is boiling, peel the potatoes and cut them into cubes. Put it in boiling water and leave it for 15 minutes on low heat. During this time, peel and cut the onion and garlic, and grate the carrot on a large grater. Saute garlic and onion in a hot pan until golden. Then add carrots to the pan, cover with a lid and saute over low heat for 5 minutes.

Peel, wash and grind the beetroot on a fine grater. Add to the vegetables that are in the pan and stew under the closed lid for another 5 minutes on low heat. Then sprinkle the vegetable mass with flour, add mustard and mix. After that, you can add tomato juice, pepper, salt to the pan, cover with a lid and leave for another 10 minutes.

Add the contents of the pan to the pan with half-cooked potatoes, mix well and leave to boil for 10 minutes. Then put the chopped cabbage in the pan and cook for another 3 minutes. Turn off the borscht and let it infuse for 30 minutes. Chop fresh dill, which you can add separately to plates.

Vegetable cream soup with bell pepper and pumpkin is prepared without the use of vegetable oil, that is, it is suitable for other fasting days. To prepare it, you will need: approximately 200 g of pumpkin, 1 bell pepper, a clove of garlic, half a teaspoon of turmeric, a pinch of nutmeg, half a teaspoon of dried ground ginger, salt to taste.

Wash the pumpkin and remove the seeds and skin. Remove the seeds from the peppers. Cut the vegetables into cubes. Add spices and garlic to the pumpkin and pepper, pour a little water (as much as is needed for the blender to work) and beat with a blender at high speed. Vegetable cream soup can be heated if desired. Pour it on plates and decorate with any greens.

Second dishes

Cabbage with mushrooms is a tasty, healthy and quite filling dish for days when you can use vegetable oil. In addition, this dish is rich in vitamins and low in calories. Take 500 g of sauerkraut, 1 kg of fresh cabbage, 300 g of mushrooms, a large onion, salt and pepper to taste, vegetable oil.

 

Finely chop the fresh cabbage. Wash the mushrooms thoroughly under cold running water and cut into thin slices. You can use marinated mushrooms, which also need to be cut into slices.

Clean and finely chop the onion, stew it in a pan over low heat until soft. Then add the prepared mushrooms to the onion and fry until half done. Add salt and pepper. Transfer the mushrooms and onions to a separate container.

 

Fry fresh cabbage seasoned with salt in a clean frying pan over medium heat. Cover and simmer for 5-7 minutes, stirring occasionally. Then add fresh sauerkraut and stew again for 7 minutes. But now you don't need to cover the pan with a lid. After that, add mushrooms to the cabbage, mix well and simmer for 5 minutes.

Lean vegetables in pots. On weekdays, when vegetable oil is not allowed, you can cook delicious and hearty vegetables in pots. Ingredients: one large carrot and onion each, bell pepper, 4 small tomatoes, 4 tbsp. spoons of tomato paste, a small zucchini, garlic, bay leaf and salt - to taste.

Peel the zucchini and cut into half rings, and carrots and tomatoes into small cubes. Also cut the onion into half rings. Combine the prepared vegetables, mix and add a little salt. Dilute tomato paste in a small amount of water. Place the vegetables in the baking pans. Pour the diluted tomato paste over the vegetables. The water should almost cover all the vegetables. Again, lightly salt the vegetables, mix and put the pots in an oven heated to 180 degrees. The dish is prepared for about an hour. About 15 minutes before the end of cooking, add a bay leaf to the pots. When the dish is ready, add some chopped garlic to the vegetables.

Lean dessert

Desserts are also included among the recipes for Lenten dishes. One of them is lean apple pie.

To prepare a lean apple pie, take 1 kg of sweet apples, 1 teaspoon of baking powder, 1 cup of sugar, 1 teaspoon of ground cinnamon, 1 cup of sifted flour and 1 cup of semolina. Liquid honey, apricot jam, poppy seeds and nuts - a little to taste.

In a separate container, mix all the components except apples, poppy seeds and nuts. Peel the apples, grind them on a coarse grater, add nuts and poppy seeds to them. Spread a few tablespoons of the dry mixture in an even layer in a baking dish. Put a layer of grated apples on top. Drizzle with a little honey. In this way, lay out several layers. The last layer should be a dry mixture. So that the crust is not too hard, there should be little mixture on top.

Place the cake in the preheated oven and bake for 50 minutes. Then remove the form and let the pie cool slightly. After that, spread it with a small amount of jam and serve.
