Cover a rectangular pan with parchment paper.
In a saucepan, mix the sugar and golden syrup and stir on medium heat until the sugar dissolves. Make sure the mixture does not boil until the sugar has melted. Once the sweet combination is smooth, let it simmer until it acquires a pleasant amber color.
Pour the baking soda and stir, the mixture will start to swell and form many bubbles. Quickly pour it into the prepared pan and leave it to cool without smoothing it.
The mixture will continue to swell and form bubbles even after you transfer it to the pan. After 1.5 hours the caramel pie will be ready for use.
