Necessary products

For the dough:

100 grams of oil at room temperature

100 grams of cottage cheese

200 grams of flour

100 grams of sugar

1 teaspoon baking powder

pinch of salt

 

For the apple filling:

4 - 5 apples (about 600 - 700 grams)

2 - 3 tablespoons lemon juice

2 tablespoons sugar

70 - 80 grams of raisins

2 tablespoons cognac

 

For the cream filling:

180 - 200 grams of cream

2 eggs

1 tablespoon sugar

vanilla - on the tip of a knife

2 tablespoons potato starch

 

Method of preparation:

Sift the flour together with the baking powder. Add the butter and grind to form "crumbs". Then add the cottage cheese and sugar.

 

Knead the dough, wrap in foil and refrigerate for 30 minutes.

 

Wash the raisins and pour the cognac over them. Clean the apples from the core with the seeds and cut them into 4 parts, sprinkle with lemon juice. Separate a few pieces for decoration, make cuts along their length, but not to the end (when baking they will dissolve like a fan). Cut the remaining quarters into small cubes, place them in a suitable container, sprinkle with sugar and pour lemon juice. Place on a hot plate and simmer under a lid, stirring occasionally until the fruit is soft (about 10 minutes).

 

Grease a baking dish with oil, take the dough out of the fridge and put it in it, forming "edges" at the edges (height not less than 3 cm).

Place the base in an oven preheated to 180 degrees for 10 minutes.

 

Make the cream filling:

In a bowl, mix the cream, eggs, sugar, vanilla, starch and mix until smooth.

 

When you take the pie out of the oven, spread the stewed fruits, raisins over the entire surface and pour the cream mixture. Arrange the reserved pieces of apples with the cuts on top.

 

You can not pour raisins with cognac, but add them to the apples that you stew.

Return to the oven for another 20-25 minutes at the same temperature. Allow the finished cake to cool in the form and then remove.
