Required products :

For the slices :

3 teaspoons cauliflower rice
1 egg, lightly beaten
1/2 cup shredded cheese
1/2 teaspoon fine sea salt
1/4 teaspoon freshly ground black pepper

For the yellow cheese :

1 tablespoon butter at room temperature
1/3 tea cup grated yellow cheese

Method of preparation :

Preheat the oven to 220 degrees and cover the bottom of the pan with baking paper, then grease it with plenty of olive oil.
Transfer the cauliflower rice to a large microwave-safe dish and turn it on high for 8 minutes.
Pour it into a clean cotton cloth, wrap and press well to dry as much as possible.
Transfer to a large bowl and add the egg, cheese, salt and pepper. Stir well.
Form 4 squares of the cauliflower mixture and bake for about 15 minutes until golden.
Remove the pan from the oven and allow the "slices" to cool for 10 minutes. Carefully separate them from the baking paper so as not to break them.
Melt the butter in a pan over medium heat and place two cauliflower peels. Spread the grated yellow cheese on them and cover with the other two crusts.
Bake for about 3-4 minutes on each side until golden brown, turning them very carefully.
Serve the sandwich warm, garnished with your choice.
