Required products :

For the slices :

  • 3 teaspoons cauliflower rice
  • 1 egg, lightly beaten
  • 1/2 cup shredded cheese
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper

For the yellow cheese :

  • 1 tablespoon butter at room temperature
  • 1/3 tea cup grated yellow cheese

Method of preparation :

 

  • Preheat the oven to 220 degrees and cover the bottom of the pan with baking paper, then grease it with plenty of olive oil.
  • Transfer the cauliflower rice to a large microwave-safe dish and turn it on high for 8 minutes.
  • Pour it into a clean cotton cloth, wrap and press well to dry as much as possible.
  • Transfer to a large bowl and add the egg, cheese, salt and pepper. Stir well.
  • Form 4 squares of the cauliflower mixture and bake for about 15 minutes until golden.
  • Remove the pan from the oven and allow the "slices" to cool for 10 minutes. Carefully separate them from the baking paper so as not to break them.
  • Melt the butter in a pan over medium heat and place two cauliflower peels. Spread the grated yellow cheese on them and cover with the other two crusts.
  • Bake for about 3-4 minutes on each side until golden brown, turning them very carefully.
  • Serve the sandwich warm, garnished with your choice.
