Necessary products

For the dough:

55 grams of butter

1/4 tea cup of beer + 1/3 tea cup

2.5 teaspoons wheat flour

1/3 tea cup rye flour

2 tablespoons sugar

2 teaspoons dry yeast

1 teaspoon salt

2 large eggs at room temperature

For the stuffing:

45 grams of butter

2 tablespoons mustard

1 teaspoon paprika

1/2 teaspoon salt

1.5 teaspoons grated cheese

ground black pepper to taste

Method of preparation :

Heat 1/4 tea cup of beer and butter in a small saucepan until the second is melted. Remove from the heat and pour in the remaining beer. Allow the mixture to cool to a "warm" state (about 30 - 40 degrees).

Mix 2 cups of flour, sugar, yeast and salt, turn on the mixer on low and start beating, pouring the oily liquid into the dry mixture. Stir until the flour is moist. Add the eggs, stirring thoroughly after each. Add the remaining flour (both types) and continue to stir on low speed for 3-4 minutes.

Transfer the finished dough to a large bowl, lightly greased with oil, cover with foil or a towel and leave for an hour in a warm place to rise.

Meanwhile, make the filling. Melt the butter and mix it with the mustard. In a separate bowl, mix the red, black pepper and salt. Pour the spices over the grated yellow cheese and shake the bowl so that they cover the yellow cheese.

Grease with oil a rectangular shape measuring about 23 x 13 cm or cover the bottom with baking paper. Sprinkle with a little flour. Roll out the dough into a rectangle measuring 50 x 30 cm and spread the butter mixture with the mustard on the surface. Cut crosswise into 5 strips.

Sprinkle the first strip with 1/5 of the yellow cheese and cover with the second. Sprinkle yellow cheese again, then dough and yellow cheese again and so on.

Cut the resulting "composition" into 6 - 7 parts and arrange them in the prepared tray. Cover with foil or a towel and leave the dough to rise for 35-45 minutes. During this time, preheat the oven to 180 degrees.

Bake the accordion until it forms an appetizing crust (about 25 - 35 minutes).

If you notice that the top begins to burn, cover with foil.

Once baked, leave the finished "bread" in the pan for 5 minutes and then remove on a board or in a suitable dish. Serve warm.

Enjoy your meal!
