Required products :

1 kg of peeled strawberries
700 grams of sugar
100 grams of sugar + 20 grams of pectin
100 milliliters of lemon juice
15 basil leaves

Method of preparation :

Freeze the strawberries, then place in the refrigerator until thawed. Clean them and cut the large ones into two parts.

Put the fruits in a suitable container and sprinkle them with 700 grams of sugar. Put on medium heat and cook, stirring constantly, until the sweet crystals melt.

Mix 100 grams of sugar with 20 grams of pectin and stir with a wire whisk. Add to the strawberries when the sugar has melted (this is important). Stir thoroughly and allow the mixture to boil, stirring constantly.

Once this is done, pour the lemon juice, add the finely chopped basil leaves, bring the jam to a boil once more and remove from the heat.

It remains to distribute the jam in pre-prepared clean jars. Close them while their contents are still hot.
