Required products :

  • 200 grams of blackberries + more for decoration
  • 110 grams of butter at room temperature
  • 150 grams of crystal sugar
  • 1 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • a pinch of cinnamon
  • 2 proteins, at room temperature
  • 155 grams of flour
  • glaze with cream cheese

Method of preparation :

Mash the blackberries with a blender to make a puree. If the seeds bother you, you can pass them through a sieve. If you think there is a small amount left, add more blackberries. A total of 170 grams should be obtained from the puree.

Reduce the oven and prepare a round pan measuring 16 cm, grease it and cover the bottom of the form with baking paper.

Start preparing marshmallows - mix butter with sugar, add baking powder, baking soda, salt and cinnamon. Stir on low speed of the mixer to obtain a creamy texture. Start adding the egg whites, one at a time, stirring well after each one. Reduce the speed of the mixer and add 1/3 of the flour, followed by 1/3 of the blackberries, alternating until they are absorbed by the mixture.

Bake for 30 minutes at 180 degrees, until dry. Cool in the pan, then cool completely on a wire rack.

Spread with cream cheese glaze and decorate with fresh blackberries.
