Necessary products:

 

for the leaven

 

  • 140 grams of wholemeal flour
  • 170 grams of spring water

 

for bread

 

  • 680 grams of flour
  • 90 grams of wholemeal flour
  • 420 milliliters of water
  • 20 grams of salt
  • 100 grams of pumpkin seeds

 

Method of preparation:

 

Mix the flour with the water and mix with a wooden spoon. Put the mixture in a jar and cover with a clean napkin, securing it with an elastic band or thread. Leave it in a warm place to speed up the fermentation process.

After 24 hours open, add 1 tablespoon of flour and 1 tablespoon of water. Stir with a wooden spoon and cover again. Repeat the procedure several times until the contents become porous. In a bowl pour the flour, add yeast, water, seeds and salt.

Stir until thick, knead on a floured surface and preheat the oven to 240 degrees. Cover a metal saucepan or form with parchment, put the dough and bake for 30 minutes. Cool, slice, serve the bread and enjoy its rich taste.
