How To Cook Cabbage Salad With Carrots And Red Onions (Curtido) - Recipe

Curtido is a type of lightly fermented cabbage salad, typical of El Salvador cuisine and other Central American countries. It is usually prepared with cabbage, onions, carrots, oregano, and sometimes lime juice is added. It looks like Bulgarian sauerkraut or Korean kimchi. It is usually served with Pupusas cornbreads, which are a national delicacy in El Salvador.

Required products :

  • 1 small head of cabbage, thinly sliced
  • 1 red onion, cut into strips
  • 1 carrot, grated
  • 1 teaspoon oregano
  • olive oil (or other fat)
  • salt and vinegar to taste

Method of preparation :

Put the cabbage and onions in a jar and pour boiling water over them. Leave on for 1 minute and rinse with cold water. Drain the liquid well, return the products to the jar, add the grated carrots and season with olive oil, salt and vinegar. Allow the mixture to stand for 30 minutes (or a few hours in the refrigerator if you have more time) until it absorbs all the aromas.

Serve as a side dish to the traditional El Salvador corn pies with Pupusas pork or eat alone.
