Required products :

  • 2 large tangerines (200 grams)
  • 4 large eggs
  • Peel 1 large lemon
  • 160 grams of sugar crystals
  • 100 milliliters of olive oil
  • 175 grams of ground almonds
  • 2 teaspoons powdered sugar

For syrup:

  • 15 grams of sugar
  • the juice of 1 lemon

For serving:

  • powdered sugar
  • whipped cream
  • 2-3 oranges - peeled

Method of preparation :

Boil the tangerines for 20-30 minutes in boiling water. Strain and allow to cool. Cut the pieces in half and clean them of seeds.

Put the tangerines (including the skin) in a blender and grind until you get a paste.

Preheat the oven to 160 degrees and grease a pan with a diameter of 20 cm (with a falling bottom). Place a sheet of baking paper on the bottom of the form.

Beat the eggs, lemon zest and sugar. Add olive oil and stir until combined. Add the mandarin puree, ground almonds and baking powder. Stir until all products are mixed.

Transfer to the prepared pan and bake for 50 minutes until the cake swells and turns golden brown. Allow to cool on a wire rack.

Meanwhile, prepare the syrup - heat the sugar and lemon juice in a saucepan on low heat until the sugar dissolves.

Make small holes throughout the tray (use uncooked spaghetti or a toothpick). Carefully syrup the cake and allow it to cool completely in the pan in which you baked it, then place it on a serving platter.

Sprinkle with powdered sugar and serve with cream and orange slices.
