Required products :

1 finely chopped onion
1 finely chopped shallot onion
1 tablespoon coconut oil
1 teaspoon crushed garlic
1 teaspoon fresh thyme
3 fresh leaves finely chopped sage
1 teaspoon cumin
1/4 teaspoon turmeric
and turmeric taste
400 grams of carrots (pre-peeled and sliced)
200 grams of parsnips (plentiful and chopped)
1/3 teaspoon quinoa (wash beforehand)
5 teaspoons vegetable broth or water
1 tablespoon miso sauce dissolved in 1 tablespoon warm water
salt of taste
2 tablespoons grated cheese - optional

Method of preparation :

Put the coconut oil in a saucepan, put on medium heat to heat. Then add the chopped onions, garlic and let them fry for 5-7 minutes or until the onion is translucent.

Then add the thyme, sage, cumin, turmeric, both types of pepper and mix everything.

It's time for carrots, parsnips and quinoa. Pour the broth and bring to a boil. When this happens, reduce the temperature and let the soup boil for 20-40 minutes until the vegetables are soft.

Then remove the pan from the heat, wait 5 minutes and strain. Add the miso sauce dissolved in water and serve the soup sprinkled with grated yellow cheese if desired.
