Required products :

  • 3/4 tea cup soft butter
  • 1 teaspoon brown sugar
  • 1/2 teaspoon white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • grated 2 medium-sized carrots
  • 3/4 teaspoon coconut shavings
  • 1/2 cup raisins
  • 2 tea cups ram nuts

cream cheese glaze (optional)

  • 1 teaspoon powdered sugar
  • 30 grams of cream cheese
  • 4 teaspoons fresh milk
  • a few drops of vanilla

Method of preparation :

Preheat the oven to 175 degrees and cover a large tray with parchment paper.

Beat the butter and sugar with a mixer. When you get a fluffy cream, beat the eggs one by one, stirring well after each one. Add the vanilla.

Separately combine the flour with the spices and baking powder. Pour them into the egg mixture and form a dough. Finally add the coconut, oats, raisins and carrots.

Form cookies (if necessary, help yourself with a spoon, taking from the mixture and put directly in the pan), bake them for 15-18 minutes. Cool.

Prepare a cream cheese glaze of your choice and the other products for the coating, mixing the ingredients well. Make a grid of icing on the cookies.

You can store them for up to a week in a box at room temperature.
