Everyone will love this healthy soup, rich in useful vitamin A. It is suitable for children and adults. You can serve at any time of the day.

Required products :

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 teaspoon ground coriander
  • 1 potato, peeled and diced
  • 450 grams of carrots, peeled and diced
  • 1.2 liters of vegetable broth
  • a handful of fresh coriander (about 1/2 packet) or parsley

Method of preparation :

Fry the onion in hot olive oil until soft. Add a teaspoon of ground coriander and diced potatoes, cook for 1 minute. Pour the carrots and vegetable broth. Once it boils, reduce the temperature, cover and cook for 20 minutes or until the carrots are soft.

Blend the soup with fresh coriander (or parsley) until creamy. Season with salt and spices to taste and serve with a few fresh coriander leaves if desired.
