How To Cook Carrot Salad With Chickpeas, Almonds And Raisins - Recipe

Required products :

For the dressing :

  • 1/4 tea cup cold pressed olive oil
  • 1 teaspoon lemon peel, finely grated
  • 3 tablespoons freshly squeezed lemon juice
  • 1/4 tea cup of orange juice, freshly squeezed
  • 1 1/2 tablespoons honey
  • 3/4 teaspoon salt
  • 1 teaspoon cumin powder
  • 1/2 teaspoon ginger powder

For the salad :

  • 1 kg of carrots, peeled and grated
  • 1/3 cup raisins
  • 1/2 cup peeled almonds, toasted or raw
  • 1/2 cup fresh parsley, finely chopped
  • 420 grams of canned chickpeas, rinsed and drained
  • 2 tablespoons finely chopped onion
  • 1 clove of garlic, pressed

For garnish :

  • fresh mint leaves

Method of preparation :

 

  • Mix the dressing ingredients in a large bowl large enough to hold the entire salad. Stir.
  • Add the carrots, raisins, almonds, parsley, chickpeas, onions and garlic.
  • Stir well to taste evenly and cover the bowl with plastic wrap.
  • Cool the carrot salad for at least 30 minutes.
  • Try and add more spices if needed.
  • Arrange on a plate, garnish with fresh mint leaves and serve.
