Required products :

1.3 kg pitted cherries (black or yellow)

1 kg of sugar

1 lemon

Method of preparation :

Clean the cherries from the stones and stalks (1 kg of net weight will remain), remove unhealthy and spoiled fruit. Pour the healthy ones into a deep bowl, fill them with sugar and leave overnight so that they can release their juice. In the morning, put the dish on medium heat. When the contents boil, reduce the temperature and cook for about 7 minutes. Be sure to remove the foam. Remove the jam from the heat and leave it for 5-6 hours to soak the fruit with the syrup.

 

Prepare the lemon. Wash it and cut into thin pieces. Be sure to remove the seeds, because they can give excess bitterness to the jam. Add the lemon slices in it, once again put on the stove to boil and cook over low heat for 5 - 7 minutes. Again, leave for 5-6 hours.

 

Boil for the third time, the cooking time now being 20 minutes, so that the syrup starts to thicken. Keep the fire low.

Sterilize jars and fill them with jam when it cools down a bit. Close and you're done.
