  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 2 teaspoons salt
  • 1/4 teaspoon cayenne pepper (+ more chickpeas)
  • 8 upper legs
  • 1 teaspoon olive oil
  • 200 grams of chorizo, finely chopped
  • 1 can of 400 grams of chickpeas, drained
  • 1 teaspoon grated lemon peel
  • 1 small onion, cut into crescents
  • 1/2 teaspoon dry red wine
  • 1/2 cup chicken broth
  • 1/2 cup sherry vinegar
  • 1/3 tea cup parsley, finely chopped

Method of preparation :

Soak the raisins in a little warm water and set aside.

Mix cumin, red pepper, 1 1/4 teaspoon salt and hot pepper in another bowl. Dry the legs in paper and season with a mixture of spices.

In a large skillet (or saucepan), fry the sausage, then transfer it (without the fat) to the chickpeas and stir. Season with remaining salt and a pinch of hot pepper, set aside.

Pour some of the fat from the pan and fry the meat only skin side down for 12-14 minutes. Transfer to a plate, placing it with the fried side up.

Put onion in the pan and when it softens after 3 minutes, pour the wine and broth.

When the liquid boils, add the legs, placing them skin side up.

Reduce heat to low and cook for about 10 minutes, until meat is cooked through.

Meanwhile, drain the raisins and add them to the chickpeas and chorizo.

Once the meat is ready, add the sherry vinegar and the chickpea mixture. Cook for about a minute or two. Pour parsley and stir.

Serve 4 servings.
