Required products :

  • 150-200 grams of chickpeas
  • 150-200 grams of bulgur
  • 1 carrot
  • 1/2 head old onion
  • small piece of celery root (optional)
  • pink Himalayan salt to taste
  • spices: a pinch of curry, turmeric, ginger or others of your choice

 

Method of preparation :

Pour chickpeas with water for several hours, the beans will swell, doubling their volume. When this happens, drain the liquid and boil them in clean water. In a separate bowl, boil the bulgur until ready, then mix the two products. You can steam them if you wish.

Grind / mash by pouring some of the liquid in which the beans have been boiled. An option is to puree chickpeas and just mash the bulgur. Thus, the mixture for the meatballs will not be homogeneous, but pieces of bulgur will be felt.

Grate carrots and celery on a fine grater, chop onions.

Add the vegetables and spices to the puree, a thick mass is obtained. If the mixture is liquid, add a little chickpea or quinoa flour.

 

There are two options for heat treatment, depending on your preferences. You could shape the meatballs from the "minced meat", which you can arrange in a tray on a sheet of parchment and bake in the oven until ready.

 

Our second suggestion is to roll the meatballs in flour and bake in a pan without fat (or with the addition of very little).
