Method of preparation :
Fill chickpeas with water overnight. Then boil (about an hour) and cool.
Eggplant cut into large cubes, put them for 7 minutes in the microwave, turned on at full power (this is done so as not to absorb a lot of fat during frying).
Fry them in olive oil for about 5 minutes and let cool.
Once this is done, mix them with chickpeas and season with a dressing prepared from chopped garlic and parsley, to which add red pepper, cumin, coriander and pour olive oil, vinegar and lemon juice (half a citrus).
Put the finished salad in the refrigerator for a few hours before serving.
