Rich and filling soup, prepared with a spicy note of chili peppers.

Required products :

  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 large red peppers, peeled and diced
  • 1-2 hot peppers, cut into circles
  • 2 teaspoons paprika
  • 1 teaspoon salt (sea, beehive or plain)
  • 1/2 teaspoon ground cardamom
  • 1/2 cup pistachios, unsalted
  • 2 cups vegetable broth or water
  • 1 cup skim butter or fresh milk
  • 2 tablespoons whipped cream
  • 1/4 cup fresh coriander or basil, finely chopped

* A tea cup is used to measure the quantities.

Method of preparation :

Heat olive oil in a large saucepan over medium heat. Add the chopped onion, peppers and hot peppers. Cook, stirring, until the vegetables separate some of their liquid and the onions begin to brown slightly. Sprinkle with paprika, salt and cardamom and stir for 1-2 minutes.

Add the pistachios and broth (or water). Stir and bring to the boil. Then reduce the heat to medium-low and simmer. Stir occasionally until the peppers are soft. Remove the pan from the heat and let the soup cool for about 5 minutes.

Pour it into a blender and puree gently until smooth, then return to the pan.

Beat the buttermilk and cream in a bowl and add to the soup, stirring. Heat for a few minutes on low heat. Serve and, if desired, sprinkle with coriander or basil leaves.
