The idea of ​​chili with chocolate still surprises most people, but the products combine perfectly in many chocolate desserts. In this silky and luxurious mousse, chili adds a light but bright accent.

Required products :

  • 1 teaspoon gelatin
  • 4 tablespoons water
  • 2/3 cup unsweetened cocoa powder
  • 1/4 cup sugar
  • 2 teaspoons hot chili + more to garnish
  • 1 teaspoon instant espresso
  • pinch of salt
  • 1 large egg
  • 3/4 cup low-fat milk
  • 60 grams of chocolate, cut into pieces
  • 1 and 1/2 teaspoons vanilla extract
  • 4 fresh egg whites (or 8 teaspoons of dry egg whites)
  • 1/2 cup light brown sugar
  • 1/2 teaspoon lemon juice

* A tea cup is used to measure the quantities.

Method of preparation :

Mix in a small bowl of gelatin with 2 tablespoons of water and set aside.

In a large saucepan, mix the cocoa, sugar, chili powder, espresso and salt.

Add the egg and milk and stir. Put the pan on medium heat and cook, stirring constantly, until the mixture begins to thicken.

Remove from the heat and immediately mix with gelatin, chocolate and vanilla extract. Stir until the chocolate is melted and the mixture is homogenized.

Using a mixer in a medium bowl, beat the egg whites, brown sugar and lemon zest until hard peaks form.

Mix 1/4 of the egg whites in the chocolate mixture until smooth, then mix with the remaining egg whites.

Pour the mousse into 8 dessert cups or ordinary cups. Refrigerate for at least 2 hours, then sprinkle with chili powder if desired and serve.
