The recipe for a classic vegetable cream soup shows the basic principles of cooking. Choose the vegetables yourself, according to your personal preferences.

Required products (for 8 servings):

  • 1 tablespoon olive oil
  • 1/2 cup finely chopped onion
  • 4 cups vegetable broth
  • 700 grams of finely chopped vegetables (of your choice)
  • 300 grams of Tofu mermaid
  • 1 tablespoon white wine vinegar
  • salt and pepper - to taste
  • a pinch of ground nutmeg
  • 1/8 cup grated Parmesan cheese

Method of preparation:

Heat the olive oil in a saucepan, add the onion and fry until soft, stirring (about 5 minutes). Pour the vegetable broth over it and bring to a boil. Then add the vegetables, bring everything to a boil again and reduce the heat. Close the pan with a lid and leave on low heat until the vegetables are soft.

Puree the soup with a blender. Add the cheese and vinegar and mash again. Salt the resulting puree, season it with pepper and nutmeg.

Serve sprinkled with grated Parmesan.
