Required products :

  • pie dough
  • 8 egg yolks
  • 3/4 teaspoon sugar
  • 1/2 teaspoon cornstarch
  • 1/2 teaspoon salt
  • 2 teaspoons fresh milk
  • 1 can of 400 grams of coconut milk
  • 2 teaspoons vanilla extract
  • 3 tablespoons butter
  • for topping:
  • 1 teaspoon cream
  • 1/4 teaspoon vanilla
  • 1/4 tea cup powdered sugar
  • 1/2 cup crushed coconut chips

Method of preparation :

Roll out the pie dough and spread it on the bottom and walls. Place a sheet of paper on top and fill the inside with beans or rice. Bake for 30 minutes at 180 degrees. Remove the parchment paper with the grains and bake until done. Allow to cool completely.

Beat the yolks with the sugar and starch, add a pinch of salt.

Heat the fresh and coconut milk, add the vanilla and bring to a simmer. Carefully start adding milk to the yolks, stirring constantly. After transferring almost the entire amount, pour the resulting mixture into the pan with the remaining milk and stir. Cook lightly to thicken the sauce.

Strain it through a sieve and pour over the marsh. Cover with foil and refrigerate for 2 hours.

Beat the cream with the vanilla and powdered sugar until soft peaks. Spread the already cooled cream with the cream and sprinkle with crushed coconut chips. Cool for another 2 hours before slicing.
