Peel a carrot and a potato, cut into large pieces and cook.
Wash the spinach and onion, drain the liquid and cut the greens into large pieces, then fry briefly in hot butter.
In a deep saucepan, mix the cooked vegetables and fried spinach and green onions, pour a little of the water in which you boiled the carrots and potatoes and puree using a blender.
Then gradually add the warm milk and season the soup with salt and freshly ground black pepper.
Arrange in bowls or deep plates and serve with crispy croutons.
