Required products :

  • 2 large aubergines
  • 100 grams of bread crumbs
  • a handful of mint, finely chopped
  • 50 grams of shredded feta cheese
  • 1/2 teaspoon hot pepper flakes
  • 4 tablespoons olive oil
  • 50 grams of white flour
  • 2 eggs, broken

for the salad:

  • 4 medium tomatoes, chopped
  • 50 grams of garden salad
  • 50 grams of olives
  • 50 grams of shredded cheese
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons olive oil

Method of preparation :

Preheat oven to 180 degrees.

Cut the eggplant lengthwise. Let the pieces be 1 centimeter thick.

Mix the bread crumbs with the mint, feta, hot pepper, salt and black pepper. Add to this mixture 1 tablespoon of olive oil.

Sprinkle the eggplant with flour and dip the eggs, then in the crispy breadcrumbs.

Heat 1-2 tablespoons of olive oil and fry the eggplant for 2-3 minutes on each side.

Mix the lettuce, tomatoes, olives and add the cheese. Season with olive oil and pour balsamic vinegar. Serve with warm crispy eggplant.
