We all know how important it is to eat healthy and avoid white flour. However, it is not always an easy task to figure out how to replace it without still having difficulty. Here's a solution for easy and healthy oatmeal cupcakes, perfect for an afternoon snack, or when you want to eat something sweet with a clear conscience.

Required products :

  • 2 eggs
  • 1 1/2 teaspoons fresh milk
  • 1/2 tea cup of fruit puree of your choice from apple, banana, pumpkin or other
  • 2 tablespoons melted unsalted butter or coconut
  • 1/4 tea cup maple syrup (or honey)
  • 1 tablespoon vanilla extract
  • 3 tea cups oatmeal
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup crushed nuts or pumpkin seeds, chocolate chips, etc.
  • 1/2 tea cup of dried fruit of your choice - dried banana, blueberries, raisins, etc.

Method of preparation :

Spray muffin tins with cooking spray.

In a large bowl, mix the egg well, add the milk, then the fruit puree and butter. Stir and add the maple syrup and vanilla. Add the dry ingredients - oatmeal and baking powder, season with cinnamon and salt and mix well with a spatula until smooth.

 

Fill 2/3 of each mold mixture. Sprinkle with nuts and dried fruit on top.
Place the pan on a medium level in a preheated oven at 180 degrees for 25-30 minutes.

Allow to cool. Before removing them, run a knife around each cupcake to peel it off.

Storage tips : You can store the muffins for up to 5 days in an airtight container in the refrigerator.
If you decide to freeze some of the cupcakes, wrap each one in a napkin and place in a tightly closed bag. Thaw them overnight in the refrigerator, then, if you prefer them warm, put them in the microwave for 45 seconds.
