Required products :

  • 3 egg whites (you can keep from cooking the egg punch)
  • 1 pinch of salt
  • 1/3 teaspoon crystal sugar + 2 tbsp
  • 1/4 tea cup egg punch
  • 2/3 tea cup flour
  • powdered sugar and nutmeg for garnish

Method of preparation :

Preheat the oven to 170 degrees. Cover two biscuit trays with baking paper and spray with cooking spray.

Beat the egg whites with a pinch of salt until a thick foam is obtained. Add 2 tablespoons of sugar and beat until a hard cream is obtained (if you turn the bowl upside down, the egg whites should not move).

In another bowl, beat the egg punch, vanilla and remaining sugar. Add the flour and mix well. Add the egg whites and combine with a spatula, being careful not to over-stir so as not to lose the airiness of the mixture.

Fill into a pouch or bag with one end cut off.

Squirt 10 cm long cakes into trays and bake for 15-17 minutes until golden.

Cool them outside the pans, then sprinkle with powdered sugar and grate a little nutmeg.
