How To Cook Eggplant Meatballs, Cheese And Rye Bread - Recipe

Required products :

  • 800 grams of eggplant
  • 100 grams of yellow cheese (hard type)
  • 2 slices of rye bread
  • 50 grams of breadcrumbs
  • 2 eggs
  • 3 cloves garlic
  • 50 milliliters of fresh milk
  • 2 tablespoons oil
  • salt, pepper

 

Method of preparation :

Cut the aubergines into large cubes and fry them in oil. Allow them to cool, during which time grate the yellow cheese, finely chop the garlic cloves and soak the bread in milk.

When the aubergines have cooled, grind them with a blender, they should turn into a paste. Add bread, yellow cheese, garlic, eggs and season to taste.

Stir thoroughly. If the "minced meat" is too liquid, add little breadcrumbs.

Form meatballs, roll them in breadcrumbs and fry until crispy.
