Required products :

  • 4 eggs
  • 450 grams of spinach leaves
  • 1/3 tea cup cedar nuts
  • 3 feathers green onions
  • 4 tablespoons butter
  • 3 tablespoons flour
  • 1 1/4 tea cups fresh milk
  • 3/4 tea cup grated cheddar cheese
  • 1 teaspoon English mustard
  • ground black pepper and salt to taste


Method of preparation :

Blanch the spinach for 2-3 minutes in boiling water under a lid. Drain the liquid, cut and put in a greased form.

Cut the mushrooms and green onions, roast the pine nuts.

Heat 1 tablespoon butter in a small saucepan over medium heat. Fry the mushrooms for 2 minutes, stirring. Then add the pine nuts, onion and after another two minutes remove the pan from the heat and season to taste.

Spread it on the spinach.

Fill a pan with boiling water.

Beat one egg in a bowl, then put in the boiling liquid. Do the other three eggs. Cook them for 4-5 minutes.

Then take them out carefully and arrange them on the spinach, mushrooms and onions in the pan.

Melt the remaining butter in a separate bowl, add the flour and fry for two minutes. Remove from the heat and gradually pour in warm milk. Return the pan to the heat and let the mixture boil, stirring constantly.

Add the mustard and pour half of the grated cheddar cheese (stir until it melts). Season with black pepper, salt and pour the products evenly in the sauce pan. Sprinkle with the remaining cheddar and bake for 20-25 minutes in the oven.

Serve immediately.
