Required products :

500 grams of wheat flour

13 grams of dry yeast

45 milliliters of cold pressed olive oil

1 teaspoon sugar

250 grams of onions

40 grams of ricotta cheese or similar

4 dried tomatoes in oil

50 grams of black olives

20 grams of parmesan

pinch of black pepper

pinch of coarse salt

 

Method of preparation :

Dissolve the yeast in 300 milliliters of warm water, add the sugar and stir. Wait 5 minutes, the volume should double.

Pour the flour into a food processor, add a pinch of coarse salt and, stirring with the appropriate attachment, pour the yeast. You should add olive oil and knead for another 5 minutes.

Transfer the dough to a bowl, cover with a towel soaked in hot water and leave to rise in a warm place away from drafts for an hour. You can put in the oven at 40 degrees for 30 minutes.

Make the filling. Cut the onion into semicircles and fry it in 3 tablespoons of olive oil over medium heat. Add chopped olives and sun-dried tomatoes, ricotta. Three minutes later, remove from the heat and pour the grated Parmesan cheese. Season and cool.

Preheat oven to 200 degrees. Knead the dough, divide it into two parts. Roll out one not too thin round layer, which you put in a greased with olive oil suitable form with a diameter of 24 cm with high walls. From the dough form walls at the end of the dish.
