How To Cook French Cake "Paris-Brest" With Cream And Almond Leaves - Recipe

Necessary products

For cream:

350 milliliters of fresh milk

100 grams of butter

2 eggs

4 tablespoons starch

1/2 teaspoon sugar

10 grams of vanilla sugar

 

For the dough:

60 grams of butter

120 grams of flour

1 tablespoon sugar

3 eggs

20 grams of almond leaves

1 teaspoon water

pinch of salt

 

For sprinkling:

1 tablespoon powdered sugar

 

Method of preparation :

 

The cream

Mix the starch, half of the sugar, vanilla sugar and eggs. Add the remaining sugar to the milk and bring it to the boil. When this happens while it is still hot, start carefully pouring it into the egg mixture in a thin stream, stirring constantly. Put the cream on low heat and stir until thickened, but do not allow to boil. Leave the finished cream to cool, but close the container with a lid or cover with foil so that no crust forms on its surface. Once cool, add the butter and beat with a mixer until smooth.

 

The dough

Mix water, salt, sugar and butter. Bring the combination to a boil and melt the butter completely. Add the flour, stirring with a wooden spoon, until the mixture is smooth and homogeneous. Cool it a bit, then add the eggs one by one, stirring well. Knead a thick dough.

 

Take a suitable tray, cover the bottom with baking paper. Using a pastry syringe, form wheels (rings) of different diameters (6 and 7 cm). Sprinkle with almond leaves and bake in a preheated 200 degree oven until golden (20 minutes). Allow the sweets to cool completely.

 

You should assemble the cake. Apply the cream to the larger rings using the syringe again. On top "close" with the smaller ones and sprinkle with powdered sugar. Put the dessert in the refrigerator for at least 1 hour.
