Peel the aubergines, cut them into pieces, sprinkle with salt and leave for a few hours (or you can put them in salt water).
Then rinse, dry and cut into cubes or straws.
Cut onions into semicircles, peppers - into straws, then stew them together for a few minutes. Add the aubergines, crushed garlic cloves, season to taste and pour the soy sauce.
Stir in the vegetables and cook over medium heat, not closing the pan with a lid so that they do not become too soft.
After 15-20 minutes the dish will be ready, all you have to do is sprinkle it with parsley or another green spice and enjoy it.
