Required products :

  • 100-150 grams of dry rice
  • 6-8 large shrimp
  • 1/2 small onion
  • 1-2 small tomatoes
  • 1 ripe pineapple
  • 3 tablespoons fish sauce
  • 1 small lime
  • a little crushed roasted peanuts
  • a few kale leaves
  • chili sauce or chili pepper to taste
  • 2 eggs
  • vegetable fat for frying
  • green onions and coriander to serve

* fish sauce can be replaced with salt


Method of preparation :

Boil the rice until ready, being careful not to boil it and turn it into a pulp. The ratio with water should be 1: 2 (1 cup of rice and 2 cups of water). At the end of cooking you can add a little salt.

Wash the shrimp, clean them, wash and dry again.

Cut the onion into large pieces, cut the pineapple into two equal parts lengthwise and carefully carve part of the inside of the exotic fruit.

Cut the flesh into small cubes, the tomatoes into larger ones, crush the roasted peanuts with a knife, and cut the cabbage leaves into large pieces.

Heat oil in a pan over high heat and pour onion and tomatoes into it. Stir constantly for 1-2 minutes and then beat the eggs in a bowl. Stir, add the shrimp and fry the products for 2 minutes, stirring constantly.

Then mix the rice and vegetables with the seafood, pour the fish and chili sauces (which you can replace with salt and hot pepper), sprinkle with a little crushed roasted peanuts and stir.

Turn off the heat and pour the pineapple cubes into the bowl with the other products, pour the juice squeezed from the lime, stir and taste. If necessary, add salt or hot sauce / pepper.

Divide the finished filling into the pineapple halves and serve the dish warm, sprinkled with fresh green spices.
