Required products :

  • 1/2 cup pumpkin seeds
  • 1 tablespoon maple syrup
  • 2 teaspoons oil
  • pinch of salt
  • 1 kg of berries
  • 4 egg yolks
  • 1/4 teaspoon sugar
  • 1/4 tea cup of tequila
  • 2 tablespoons orange juice
  • 1 teaspoon grated lime peel
  • 2 tablespoons lime juice

Method of preparation :

Turn the oven to 175 degrees and line a baking tray with parchment paper.

Mix the pumpkin seeds with the maple syrup and pour into the prepared pan. Bake for 10-15 minutes, then cool completely.

Meanwhile, chop the larger berries.

Fill a saucepan with water, about 3-4 inches from the bottom, and heat it.

Beat the yolks with the sugar, tequila, juice of both citrus fruits, add the lime peel. Pour into a fireproof bowl, which you place on the hot water - the goal is that the bottom of the bowl does not touch the water. Stir constantly to prepare the cream on the boiling water. Check with a thermometer if it is ready - when the cream reaches about 60 degrees, you can remove it from the stove.

Put in a shallow dish of sauce, and on top of fruit and caramel pumpkin seeds. Enjoy!
