Required products :

  • 1 head of garlic
  • 2 large tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon ground dried red pepper
  • 2 teaspoons whole coriander
  • 1/2 teaspoon dried thyme
  • 2 teaspoons vegetable broth or water
  • 1 small onion
  • salt and pepper to taste

 

Method of preparation :

Preheat oven to 200 degrees.

Cut the unpeeled head of garlic in half across the cloves, tomatoes also cut in two.

Put the tomatoes and garlic in a pan, sprinkle with olive oil and place in the oven for half an hour or until the garlic softens.

Peel an onion, chop finely and fry in a pan with a little olive oil for a few minutes.

Remove the tomatoes and garlic from the oven. Put the garlic next to the onion first, removing the peel, and then add the tomatoes.

Pour the hot broth into the pan and put on the stove to boil over high heat, then reduce the temperature to medium.

It is the turn of coriander, pepper, thyme, salt and pepper. When you add the spices, leave the soup on the fire for 3 minutes, stirring.

Remove from the heat, distribute in suitable plates and serve with grated yellow cheese if desired.
