Required products :

  • 450 grams of green beans
  • 2 slices wholemeal bread (or breadcrumbs)
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 1/2 teaspoon garlic, chopped
  • 6 tablespoons Parmesan cheese, grated
  • 1/2 cup onion, chopped
  • 100 grams of mushrooms, cut into thin slices
  • 1 and 1/2 tablespoons flour
  • 1/2 cup chicken broth
  • 1/2 cup fresh milk
  • 2 tablespoons dry sherry wine
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • a pinch of ground nutmeg

* A tea cup is used to measure the quantities.

Method of preparation :

Place the oven rack on the top row and heat the appliance to a high temperature.

Pour the green beans into a saucepan of boiling water and cook for 3 minutes or until slightly softened, then transfer to ice water and drain.

Grind the bread into large crumbs, pour into a bowl along with parsley, olive oil, garlic and 2 tablespoons of Parmesan, stir.

Heat the remaining 2 tablespoons of olive oil in a pan and fry the onions and mushrooms in it for 8 minutes. Add the flour and fry for 1 minute. Pour the chicken broth, milk, dry wine and simmer for 3 minutes, then remove the pan from the heat.

Pour into the bowl with the milk broth the green beans, the remaining 4 tablespoons of parmesan, salt, pepper and nutmeg and stir. Sprinkle evenly with the ground bread and bake in the preheated oven for 2 minutes. Serve with green salad if desired.
