As the weather warms, the barbecue becomes even more tempting, and delicious side dishes are never superfluous. We offer you another version of potato salad with crispy bacon, creamy mayonnaise dressing and balsamic vinegar. Enjoy the interesting salad, intertwined with different flavors.

Required products :

  • 1,300 kg of red baby potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon mayonnaise
  • 1/4 teaspoon parsley
  • 1/4 tea cup white balsamic vinegar
  • 2 teaspoons sugar
  • 2 teaspoons Dijon mustard
  • 1 cup sliced ​​red onion crescents
  • 120 grams of blue cheese
  • 6 slices of bacon

Method of preparation :

Fry the bacon in a dry pan until crispy. Drain the excess fat and chop finely.

Preheat the grill to 200 degrees.

Cut the potatoes in halves and place them in the center of a large sheet of aluminum foil. Sprinkle with salt and pepper and pour olive oil. Wrap the potatoes in foil and make a large envelope.

Place the package on the grill and bake for 15 minutes on each side. Carefully dissolve the foil and allow the potatoes to cool for 5 minutes.

Mix the mayonnaise, parsley, balsamic vinegar and sugar in a large bowl. Add the potatoes and shake the bowl.

Add onion, grated blue cheese and bacon.

Mix all products and serve.

Note: If desired, you can use dark balsamic vinegar, but it will change the color of the salad.
