Necessary products :

Béchamel sauce with cheese :

  • 1 1/2 tablespoons unsalted butter
  • 1 1/2 tablespoons flour
  • 1 1/4 tea cup whole milk
  • 1/3 tea cup grated cheese, plus extra for sprinkling
  • 2 teaspoons Dijon mustard
  • 1/4 teaspoon freshly grated nutmeg
  • 1/4 teaspoon salt
  • black pepper to taste

Muffins :

  • 6 large toast slices, middle
  • 2 tablespoons melted butter
  • 6 eggs
  • 100 grams of ham ham

For sprinkling :

  • fresh parsley, finely chopped
  • nutmeg, freshly grated

Method of preparation :

Cups of bread :

  • Preheat oven to 180 degrees.
  • Cut the crust of the bread and roll out the middle with a rolling pin.
  • Arrange the slices in a muffin tin, gently pressing them to form cups.
  • Put them in the oven for about 5 minutes to dry the bread. Don't let it brown.

Béchamel sauce with cheese :

  • Melt the butter in a saucepan over medium-high heat. Add the flour and mix until a paste-like mixture is obtained.
  • Add half of the milk and stir for about a minute until the sauce thickens.
  • Add the remaining milk, Dijon mustard, nutmeg, salt and pepper. Stir constantly as the sauce thickens quickly.
  • After about 2 minutes, remove from the heat and allow to cool for about 5 minutes. As it cools, the sauce will thicken further. Then add the cheese and mix well again.

Muffins :

  • Coat the edges of the bread cups with melted butter.
  • Distribute the ham in them and carefully beat one egg at a time.
  • Drizzle with the sauce and sprinkle with a pinch of cheese on top.
  • Bake in a preheated oven to 180 degrees - 18 minutes for loose yolks and 23 minutes for hard yolks.
  • Wait a few minutes before sprinkling with fresh parsley and nutmeg.
  • Serve the muffins warm.
