Required products :
300 grams of almonds
100 grams of almond flour (finely ground almonds)
1.5 kilograms of sugar
2 liters of water
1 teaspoon of almond extract
Preparation :
Pour the peeled raw almonds with boiling water for 1-2 minutes, then rinse them under cold running water and remove the coating of nuts. Dry them and cut with a knife.
Pour the sugar into a thick-bottomed saucepan. If you prefer the sweeter, you can use a larger amount, but up to 3 kilograms.
Add the chopped almonds and the flour obtained from ground nuts to the sweet crystals, and add the almond extract. Pour the water (maybe mineral) and place the dish on the stove.
Let the mixture boil for 10-12 minutes, then remove from heat, close the pan with a lid and let its contents stand for 10-12 hours.
When the syrup has become sufficiently concentrated, strain it into a bottle or other suitable container using a strainer or gauze.
