Pour the milk into a saucepan and heat, stirring often.
Meanwhile, squeeze the lemon juice.
Cover the bowl with a double layer of gauze.
Pour the lemon juice over the milk and leave for 25 minutes.
Then slowly pour it into the bowl, straining through gauze. Gather the ends of the fabric in the middle and squeeze out the excess liquid. Pour the curd into a large bowl.
Add basil and lemon peel, season with salt and pepper, stir.
Put the dairy product in the refrigerator for 2 hours, after which you can eat a slice smeared with it.
