Here is a recipe for some of the most successful and tender butter biscuits you can make. Thanks to the delicate texture of the cream cheese, the taste of the biscuits will not be insanely sweet. See how to prepare them.

Required products :

  • 1 teaspoon butter at room temperature
  • 60 grams of cream cheese at room temperature
  • 1 teaspoon sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 teaspoons grated lemon peel
  • 9 teaspoons flour
  • 4 1/2 teaspoons baking powder
  • 1 1/2 teaspoons salt

Method of preparation :

First of all, it is important to specify that you need to temper the cream cheese and butter by taking them out of the fridge an hour before putting them in the recipe.

It is best to use static, but it is not a problem to prepare the recipe with a simple hand mixer, as long as you have enough patience to break down the ingredients.

Put the cream cheese and butter together with the sugar in the bowl of the mixer. Beat until the sugar crystals dissolve and the mixture becomes fluffy and pale.

Add the egg, vanilla and almond extracts and lemon zest.

Allow the ingredients to break up, while in another bowl mix the flour, baking powder and salt. Spoon the dry products into the oil, waiting for each to be well absorbed before adding the next. Mix with a mixer until the dough is formed, then shape it into a ball.

Divide the dough into two parts and roll out between two sheets of baking paper or cling film. Leave for 1 hour in the refrigerator to cool.

Preheat oven to 180 degrees. Prepare baking trays by covering them with paper.

Using cookie cutters, cut out the desired shapes and arrange in the trays, leaving a small space between the biscuits. Bake them for 8-12 minutes, depending on their thickness. As soon as they change color slightly, they are ready.

Allow them to cool for 5 minutes in the pan, then transfer to a wire rack.

If you want to decorate them with icing or other glaze, wait for them to cool completely. Store the sweets in a tightly closed container.
