Allow the eggs to simmer outside the refrigerator, reaching room temperature for 30 minutes.
Preheat oven to 110 degrees.
Put the egg whites in a bowl and add the tartar cream to them. Beat them moderately with a mixer until foamy. Start gradually adding the sugar - spoon by spoon, mixing after each one until the crystals dissolve. Keep beating until you get hard shiny tips.
Take a pastry bag and fill it with some of the mixture.
Line a large shallow pan with parchment paper. Shape the bunnies about 8 cm in size. Bake them in the middle of the oven for about 1.5 - 2 hours, until they harden.
Melt the chocolate in the microwave and stir until smooth. Use as much of the pastry paint as you need to get a nice pink color.
Put the chocolate in a bag with a slightly cut tip or a small attachment and draw the bunny. Put a little of the mixture on each sugar heart and stick them on the eyes and nose.
