Learn how to cook "Lean rye cookies with dried fruits, almonds and cinnamon". Delicious recipe.
Required products :
2 teaspoons rye flour
1 teaspoon wheat flour a
pinch of salt
1 teaspoon baking powder
hot water (as much as it takes - about 3/4 teaspoon)
1/2 teaspoon vegetable oil
For the filling:
1.5 - 2 teaspoons dried apricots
1 teaspoon raisins
1 teaspoon almonds
sliced lemon
1-3 teaspoons cinnamon (to taste)
If desired, you can add anise, ginger or other preferred spices.
These dried fruits are also optional. You could replace it with dates, prunes or figs - a matter of taste. Instead of almonds, the option is to use walnuts or other nuts.
You can make cookies only with rye flour or only with whole wheat.
Method of preparation :
Wash the fruits thoroughly, put them in a suitable container and fill them with hot water.
Grind or crush the almonds in a mortar, do not turn into flour, let there be small pieces of nuts.
Mix the two types of flour, add the baking powder, then the oil and stir. Lumps are obtained.
Pour as much water as needed to make an elastic but not sticky dough. Leave it for the moment and start with the filling.
Drain the water from the dried fruits and grind them with a blender together with a slice of lemon or put grated citrus peel. Add cinnamon to taste and other spices you want.
Add the ground almonds to the resulting paste, stir and the filling is ready.
You can make a larger amount of such a mixture from which to form healthy candies. Roll them in crushed nuts, coconut shavings, cocoa powder, poppy or sesame seeds ... This way you will have another amazing dessert.

Roll out the dough thinly, you can cut the irregularities at the edges to get a rectangle.
It is more convenient to roll directly on baking paper.
Spread an even layer of the fruit filling with the nuts on the dough. The base and filling should be approximately the same thickness. Leave about 1-1.5 cm from both ends without puree so that you can glue the roll.
A large layer of dough is obtained, so the option is to form two rolls to make them thinner.
Then cut into pieces.
Arrange them in a tray, the bottom of which you have covered with parchment.
Bake for about 20 minutes in the oven at 200 degrees.
