Necessary products

For the dough:

4 teaspoons flour
1 teaspoon carbonated water
2 tablespoons corn flour
1 tablespoon vinegar
1 teaspoon salt
1 teaspoon olive oil or corn oil to spread the dough leaves

For the stuffing:

4-5 stalks of leek (white part)
2 tablespoons butter
500 grams of cheese (feta, white brine or other suitable type to your taste)
2 eggs

 

Method of preparation :

Sift the flour into a bowl and add the salt. Make a hole in the middle in which to pour sparkling water and vinegar. Knead dough that does not stick to your hands. If, despite enough kneading, it still sticks to your palms, add a little more flour.
Shape the dough into a ball, wrap in plastic wrap and refrigerate for at least 2 hours.

 

Meanwhile, make the filling.
Clean and wash the leeks (you only need the white part). Cut and fry until soft in butter, add salt to taste.

 

Remove the pan from the heat and when the leeks have cooled, add the eggs, the grated cheese, add ground black pepper to taste and mix everything thoroughly.

 

From the cooled dough, form 24 balls of the same size, which you put in a bowl sprinkled with flour.

 

Roll each in the form of circles, as seen in the next photo.

 

Using a silicone brush, smear the surface of a sheet of dough with corn oil, put a second one on it, grease it again and place a third layer of dough.

 

In this way, make a total of 8 circles of 3 layers.

 

Roll them very thin, this is important (it is not necessary to keep the round shape, but the thickness is important).

 

Try to roll out until transparent, but without the layers breaking when you lift into the air.

 

Grease a thin sheet of dough with oil, fold in half and grease again. Do not save oil.
Do the same with the rest of the dough.

 

Divide the filling into 8 equal parts, which you distribute at one end of the sheet (folded in two).

 

Roll them up, folding the ends inwards after the first turn.

 

Arrange in a pan greased with oil, cut each "tube" into 4 equal parts, which again cover with plenty of vegetable oil.


Bake the pie in a preheated oven at a temperature of 180 degrees until golden.
