Baked potatoes are an integral part of the Bulgarian table. We offer you to enrich the taste with lemon juice and Kalamata olives and try a dish that is as familiar as it is new and unusual. Here's how to make lemon potatoes with olives.

Required products :

  • 5 yellow potatoes
  • 1/2 teaspoon water
  • 1/4 cup extra virgin olive oil
  • 4 cloves garlic - crushed with a garlic press
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon sweet red pepper
  • 1 lemon (juice and peel)
  • 1/2 cup Kalamata olives (25-30 pieces), boneless
  • 1/2 teaspoon flat parsley

Method of preparation :

Wash and slice the potatoes, grease them and season with spices (without parsley). Distribute them evenly in a large baking tray, covered with paper and pour the water over them. Spread the olives all over the pan and crush the 4 cloves of garlic. Stir in the potatoes and place them in the oven.

Bake at 200 degrees for 30 minutes until the potatoes are browned. If necessary, add another half cup of water.

Turn the potatoes over and bake for another 30 minutes until they become crispy and acquire an appetizing crust on both sides. Serve sprinkled with parsley leaves.
