Diversify your menu by preparing the next delicious dish of lentils with zucchini and spinach, which has a rich rich taste. Thanks to the fiber contained in the lentils, you will be full for a long time, which makes the dish suitable for lunch.

Required products :

  • 2 tablespoons olive oil
  • 3 carrots
  • 1 onion
  • 4 cloves garlic
  • 1 1/2 liters of vegetable broth
  • 2 tomatoes
  • 1 1/4 tea lentils
  • 1 1/2 teaspoons dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1 zucchini
  • 2 teaspoons spinach or kale
  • 1 tablespoon lemon juice
  • salt and pepper
  • parmesan for serving (optional)

 

Method of preparation :

In a saucepan, fry the chopped onions and carrots for 2 minutes, add the crushed garlic and stew for another 2 minutes. Pour the vegetable broth and put the tomatoes in cubes (you can also use canned). Wash the lentils and pour it into the broth. Season with basil, oregano, thyme, salt and pepper to taste.

Bring to the boil, then reduce the heat to low and cover with a lid. Cook for 35 minutes, stirring occasionally.

 

Cut the spinach and zucchini. Add them to the dish and leave on the stove for another 10 minutes to cook.

Dissolve the lemon juice in half a teaspoon of water and pour into the soup. If it looks thick, add a little more water.

Serve the dish warm. If desired, you can sprinkle with grated Parmesan cheese.
