How To Cook Low Carb Easter Cake With Nuts And Coconut Flour - Recipe

We have already introduced you to Denny, who prepares great low-carb dishes, and now we present to your attention her version of Easter cake with coconut flour and nuts.

Required products :

  • 270 grams of ripe mozzarella - grated
  • 2 eggs
  • 80 grams of cream cheese
  • 45 grams of coconut flour
  • 1 baking powder
  • 1 teaspoon vanilla essence
  • 2 tablespoons cocoa or dark chocolate
  • 2 tablespoons raisins
  • 2 tablespoons walnuts

Method of preparation :

Put the grated mozzarella in a bowl and melt in the microwave for 30 seconds, stir and repeat (you can melt in a water bath). Add the cream cheese to it and mix until a homogeneous combination is obtained.

Put the eggs one by one, stir again and then add the flour and baking powder. Knead until you get a dough.

Divide it into two equal parts and roll each between two sheets of parchment paper. Sprinkle cocoa (or crushed chocolate) and walnuts on one sheet of dough, cover the other with raisins. Roll up the rolls and intertwine them. Transfer the Easter cake to a small rectangular baking dish.

Put it in the oven for 30 minutes at 190 degrees, covered with foil, then remove the leaves and bake for another 30 minutes.

 

Allow to cool completely before serving. Cut and enjoy the low-carb version of the festive Easter cake.
