Required products :

  • 8 ripe peppers / red, yellow, orange and green /
  • 2 tablespoons capers
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon white wine vinegar
  • 1 teaspoon water
  • 1/4 teaspoon sugar
  • 1 1/2 teaspoons sea salt
  • 2 cloves garlic, cut into thin slices
  • cold pressed olive oil

Method of preparation :

  • Roast the peppers and transfer them to a bowl.
  • Cover with plastic wrap and let them simmer for 10 minutes.
  • Peel, clean and cut into strips.
  • Put them in a fireproof bowl and add the capers and parsley.
  • In a saucepan, heat the vinegar, water, sugar, salt and garlic over medium heat.
  • Once the mixture has simmered, cook for about 2 minutes until the sugar and salt are completely dissolved.
  • Pour the marinade over the peppers and let them stand for 1 hour.
  • Drain the peppers, keeping a small amount of marinade.
  • Distribute them in clean glass jars, add 1 tablespoon of the marinade and cover with cold pressed olive oil.
  • Close the jars tightly and leave them at a cool room temperature for 24 hours.
  • Before storing them in the refrigerator, make sure that the peppers are completely covered with olive oil.
  • Store within 3 months.
