Required products :

  • 6 thin slices of bacon
  • 2 1/4 teaspoons fresh milk
  • 2 tablespoons butter
  • 1/2 cup cornmeal
  • 2 tablespoons salt
  • 1 teaspoon pepper
  • 2 1/2 tea cups grated cheddar
  • 6 large eggs
  • 2 1/2 teaspoons whole milk
  • 1 teaspoon cream
  • 1/3 tea cup chopped green onion feathers

Method of preparation :

Fry the bacon, drain it on paper, chop finely.

Take 2 tablespoons of the fat in which you fried the bacon and pour it into the pan. Add the butter, after it has melted, stir in the cornmeal mixture, season with salt and pepper. Stir occasionally and leave on the stove for 15 minutes to thicken and form a slurry.

Cool for 10 minutes and stir in the mixture 1 teaspoon cheddar cheese. Leave for another 10 minutes, then add 1 egg and stir. Pour the mixture into a tray with peeling walls and level.

Bake for 25 minutes at 175 degrees until the marsh is browned. Sprinkle with the remaining 1 1/2 teaspoons of cheddar on a warm baking sheet, leave for 15 minutes to melt from the heat at room temperature.

Reduce the oven temperature to 160 degrees.

Combine the milk, cream, onion and the remaining 5 eggs, season. Pour the resulting mixture swamp and sprinkle with crushed bacon.

Place the pan in a larger tray lined with aluminum foil.

Bake for 1 hour and 15 minutes, until the milk mixture hardens and browns at the edges. Allow to cool for 20 minutes, then run a knife along the edges to peel off the mold. Remove the walls of the pan and serve.
